Wine Poached Bosc Pears

Ingredients

Serves 6 as a side dish or dessert

  • 6 medium Bosc pears
  • 1 bottle strong red wine
  • spices: cloves, cinnamon, allspice, pepper
  • 1 cup sugar

Preparation

 

1. Peel the pears with a sharp peeler, being careful to make even strokes and to keep the stem intact.

2. Place the wine, spices, and sugar in a pot large enough to submerge the pears.

3. Poach the pears in the wine at a gentle simmer until tender, about 20 minutes.

4. Allow the pears to rest in the wine, turning them occasionally, so they soak in the spices.

5. Strain the wine, reserve the pears, and reduce the wine over medium heat until it is like a syrup.

6. Poached pears are delicious served with vanilla ice cream and the wine syrup as a dessert, or also make a wonderful side dish to game meats and lamb.
