Fairview Gardens Micro Kale Salad,

Shaved Asian Pears, Meyer Lemon and Truffle Oil Dressing

 

Ingredients, Serves 8

 

 

       1 bag Fairview Gardens Micro Kale

       3 Asian pears, preferably Kosui variety

       1/2 tsp. minced garlic

       1 Tbs. minced scallions

       1 tsp. Dijon mustard

       1 tsp. Meyer lemon zest

       2 Tbs. Meyer lemon juice

       3 Tbs. olive oil

       2 Tbs. Truffle oil

       2 tsp. minced parsley

       salt and pepper to taste

 

Process

 

       Wash and spin dry the micro kale, and keep chilled

       Peel and core the Asian pears and slice them 2 mil thick

       Make the salad dressing: Stir together the garlic, scallions, mustard, Meyer lemon zest and juice. Whisk in the oil. Add salt and pepper to taste, and the parsley.

       Toss the kale in the dressing.

       Fan out a circle of Asian pear slices, and mound kale in the center.

       Serve.
